Quick Soak: 1. Sort and rinse beans. 2. Boil 6-8 cups of water. 3. Add 1 lb. (2-1/2 cups) of beans, and then boil for 2 minutes 4. Remove from heat, cover with lid and let stand for 1 hour. Rinse beans after draining water. Overnight Soak: 1. Wash and sort the beans. 2. Add 1 lb. (2-1/2 cups) of beans to 6-8 cups of water. 3. Let stand for at least 6 to 8 hours, preferably overnight. 4. Rinse beans after draining water. Cooking Instruction: 1. Bring 6-8 cups of water to boil. Add drained and rinsed beans (2-1/2 cups) to the boiling water and reduce heat to simmer. 2. Simmer gently and cover with lid until desired tenderness is reached, about 1-1/2 to 2 hours. 1 serving 1/2 cup cooked. Difference in altitude, hardness of water and product moisture may change the Suggestion Cook Time: Beans are an agricultural product.
