Blueberry Muffins: 1 egg; 1/3 cup oil, melted coconut oil or melted butter/ghee; 1/2 cup water; 1 package Bob's Red Mill Grain Free Blueberry Muffin Mix. Preheat oven to 350 degrees F. Line a standard muffin tin with 6 liners, then coat liners with non-stick cooking spray. Whisk together egg, oil, water and muffin mix. Fill each muffin cup 3/4 full. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Let cool before serving. Makes 6 standard muffins. 12 Muffin Variation: Prepare as above, lining a standard muffin tin with 12 liners. Coat liners with non-stick cooking spray. Spoon batter evenly between the cups, then bake 25-30 minutes. Makes 12 small muffins. Store in a cool, dry place.
