Chuck Wagon Chili: Ingredients: 1 tsp. olive oil. 1 lb stew meat, cut into 1/2 inch cubes. 1 lb. ground beef. 1 cup diced onion. 1/2 cup diced jalapeno. 1 packet 6666 Chuck Wagon chili mix. 2 cups beef broth 1-1/2 cups diced tomatoes. 1. In large pot, heat oil over medium heat and brown stew meat. Add ground beef and cook 7 minutes, breaking up beef, until browned. Stir in onion and jalapeno and cook 5 minutes, stirring occasionally. 2. Add 6666 Chuck Wagon Chili Mix and cook 2 minutes. Stir in beef broth and bring to a boil over high heat. Reduce heat and simmer, covered, 1 hour. 3. Add tomatoes and continue to cook, covered 45 minutes or until beef is very tender. Tip: For thicker chili, remove cover for the last 15 to 20 minutes of cook time and simmer until desired consistency. If desired, stir in 1 can (15.5 oz.) rinsed and drained kidney beans and cook 2 minutes or until heated through.
