Pancakes and Waffles: 2 cups Pioneer Buttermilk Baking Mix, 1-1/2 cups milk, 2 eggs. Heat lightly oiled surface to 350 degrees F. Mix ingredients until smooth. Add 2 to 4 tbsp melted butter, if desired. Cook pancakes 1 to 2 minutes per side (turn only once); cook waffles 2 to 3 minutes. Makes 12 to 14 5-inch pancakes; 10 to 12 5-inch waffles. Do not sift - fill cup lightly. Preheat oven before baking. Biscuits: 3 cups Pioneer Buttermilk Baking Mix, 1 cup milk. Heat oven to 450 degrees F. Mix ingredients well. Turn onto floured surface; shape into ball. Knead 3 to 4 times. Roll 1/2-inch thick. Cut with 2-inch cutter without twisting. Place together on lightly oiled baking sheet. Bake 11 to 13 minutes. Brush with melted butter. Makes 18 biscuits.
