You will need. 1 egg yolk. 8 tbsp. (1 stick) unsalted butter, softened to room temperature. Baking sheets lined w / parchment paper. Instructions: 1. Preheat oven to 350 degrees F. 2. Cream butter until soft and stir in egg yolk. Add cookie mix and stir until well blended and a soft dough is formed. Set aside. Pour cornflake packet into a separate bowl. 3. Measure out 2 Tbsp. portions of dough and form into balls. Roll each ball in the cornflakes, pressing to stick. Place the cookies 4 inches apart on parchment lined baking sheets. 4. For a softer, chewier cookie, bake for 14-15 minutes or just until edges and peaks turn golden brown. For a crispy cookie, bake 15-16 minutes. Cool for a few minutes and transfer to a wire rack. Makes about 12 large cookies. Do not eat raw batter. Chrissy’s Pro Tip: Mix in 1/2 of the cornflakes into the dough and use the remaining 1/2 to roll the dough in! The texture of these cookies is to die for! Store in a cool dry place.
